Manly Spirits Co. Distillery was established eight years ago from a passion for creating spirits that reflect our distinct climate and Australian distilling traditions. We have a rich history of making world-class wines and brewing quality craft beers, allowing many of these skills to cross over into making premium whisky.

The new make spirit for Coastal Stone Whisky is lovingly produced at the Manly Spirits Distillery from grain to glass. Our fermentation is gentle and patient, drawing from the expertise of nearby breweries, which have taught us much about fermentation with barley and extracting the best flavours and yields. Australia produces high-quality barley, and we support our New South Wales growers by purchasing this quality malted grain. We mash Australian ale malt to extract the malt sugars, which are then slowly converted by a blend of distillers yeasts in a slow fermentation process over five days.

The refined qualities of Coastal Stone whisky are achieved through our tall stills with upward-sloping lyne arms and a spirit still onion that add additional reflux and spirit purity. The result is a clean, sweet, and malty new make spirit. In the final spirit run, the distillers take a small fore shot cut and slow the still down to further enhance the spirit for optimal barrel maturation. These uniquely designed double copper pot stills produce the cleanest spirit, starting our whisky’s journey one step ahead.

We are fortunate to have pure and soft water that starts its life being filtered through Sydney sandstone. Our whisky is non-chill filtered and has no need for added colors due to its rich cask extraction. As the whisky is so rich with flavor congeners, it may form a flocculant over time in the bottle or become a little hazy when diluted against a large block of ice. This is a sign of an artisan craft whisky where flavor is prioritized over appearance.

About This Expression:

This single malt whisky was made using techniques learned from the extensive wine industry in Australia, which we call “marrying on the table.” We developed a flavour profile that we thought was optimal and then searched our stock to create this special flavour. If you could use the analogy of an orchestra, where you require strings, wind, and brass instruments to combine to deliver complex yet balanced harmonic music, whisky is the same. We used a backbone of a selection of Bourbon casks and then layered it with some stock from our Sherry casks, port cask, and some French oak casks to create this exquisite whisky.

Flavour Profile: Pear / Honey / Candied Ginger

Vibrant sunflower aromas with a fruity lift of apple and pear. Vanilla marshmallow and cinnamon spice lead to honeyed nashi pears, hints of banoffee pie, and candied ginger characters on the palate. Finishing smooth and mellow, urging you to try more.
