Distillers Gareth and Angela Andrews believe authentic whisky carries with it a sense of place from where it was created and the philosophies of those who distilled it.

The Fleurieu Distillery is situated where the sandy surf beaches of the Coorong meet the rugged rocky coastline of Cape Jarvis. Located on the water’s edge in the river port of Goolwa this family owned distillery proudly produces nationally and internationally award-winning whisky.

Highest quality ingredients and carefully chosen yeast profiles create the perfect spirit to age in Tawny and Apera casks. In this maritime environment, whisky develops expressive maple and vanilla oak overtones mixed with spicy sea-air aromas. These elegantly combine to create a smooth bodied character that comes only from maturation on the southern coast.

Our unique location in Goolwa contributes greatly to the maturation and style of our Single Malt Whisky:

  • We are a coastal distillery. Our site is 15m from the water’s edge and approximate 2m above sea level
  • Wherever barrels are housed they interact with climate and place. Here barrels absorb environs of river and sea as the spirit ever so slowly moves in and out of the wood over time. This process helps to develop the specificity of place in the flavour profile of our malts
  • The barrels stored here in a cooler maritime part of South Australia really reap the benefits of the changes in coastal climate from the Southern Ocean
  • The intermittent hot summer days and cool sea breeze nights allow the barrels to not only breathe in the new make spirit but being close to the ocean and river they are also exposed to the rapid changes in humidity and air pressure
  • In our aim to preserve the cultural terroir of climate and its effect on the spirit through the barrel to give people the taste of the Fleurieu we find our whiskies consistently present a signature style salted caramel and umami character.
