Who are 5NINES?
Two guys, David Pearse and Steven Griguol, with one sole passion – to create the perfect spirit. At 5Nines they are all about trying to achieve perfection. 5Nines – 99.999% perfection.
5Nines distillery was founded in 2016 by David and Steven, who are both passionate spirits lovers, particularly whisky. After some considerable research they set about making their 1000L pot still. It was a 3 month labour of love, rolling, beating and welding until they had their shiny creation.
The distillery operated from Davids garage for 4 years in the Adelaide Hills. In this tiny operation they somehow managed to craft and tuck away nearly 40,000 litres of spirit into carefully selected barrels.
Steven spends considerable time working with South Australia’s rich history or wine and fortified makers to hand select some of what they believe are some of the best barrels available.
In late 2021 the distillery moved to a larger location on the Adelaide plains. This has allowed the distillery to move to a 7 days week operation and increase production even further. They are currently building their new wash still, a 3500L unit which should be in service by the end of 2022.
They are currently developing an export market in Asia.
